Prepare the ingredients by chopping the scallions, onions, and carrots. Fluff the rice, and prepare the eggs and seasonings.
In a pan on high heat and a bit of oil, scramble the eggs, then set on the side.
In the same pan, saute the scallions to make scallion oil. Once fragrant, add the onion and carrots, and continue sauteing.
Add the rice and season with soy sauce, oyster sauce, and sesame oil on top of it.
Break apart the rice to evenly spread the seasoning, then mix it thoroughly.
Add butter and continue mixing.
Taste the fried rice and adjust using salt and pepper.
Now, pack your fried rice in a bowl and place it on a plate.
In a really low heat and oiled pan, cook an egg sunny side up.
Top the fried rice with fried egg, garnish with sesame seeds, serve, and enjoy!
