- Vegetable or Canola Oil For sauteing
- 1/4 of Whole Onion
- 1 stalk Scallions
- 2 pcs Eggs
- 2 tbsp Ketchup
- 1/2 tbsp Soy Sauce
- 1/2 tbsp Garlic
- 1/4 tbsp Oyster Sauce Optional
- 1/4 cup Water

- Salt and Pepper To taste
- Sesame Oil and Sesame Seeds For garnish
Chop the onion and scallions.
In high heat, add a bit of oil to the pan, and saute the onion and half of the chopped scallions.
Once the aromatics are fragrant, place two eggs on top of it.
Meanwhile, combine ketchup, soy sauce, garlic, oyster sauce, and water. Mix well.
Once the egg is partially cooked, add the sauce to the pan, baste some of it on the eggs, and let the rest reduce.
Add jalapeño peppers or chili oil, then taste and adjust with salt and pepper.
Place this on top of rice and finish with sesame oil, sesame seeds, and more scallions.
Serve hot and enjoy!
