Italian Wedding Soup

Italian Wedding Soup is a warm and comforting soup filled with meatballs and a variety of vegetables. This is one of our family favorites, Carter and Wesley-approved!

Ingredients

  • 2 Large Carrots Minced
  • 1 Large Onion Minced
  • 8 stalks Celery Minced
  • Spinach As much as you like
  • Salt To taste
  • Pepper To taste
  • Garlic Powder To taste
  • Dried Parsley To taste
  • 1-1.5 L Chicken Broth
  • Grapeseed or Olive Oil For sauteing

Turkey Meatballs

  • 1 lb Ground Turkey
  • 1 pc Egg
  • 2.5 tbsp Whole Wheat Flour
  • Garlic Powder To taste
  • Salt To taste

Instructions

  • Mince the onion, carrots, and celery. Set aside.
  • Combine ground turkey, egg, and whole wheat flour. Season with garlic powder and salt to taste. Mix well, shape into balls, and set aside.
  • In a deep pot, add a bit of oil, turn to high heat, and saute the onion.
  • Once the onion is fragrant, add carrots and celery, and saute it well.
  • Once the vegetables are browned, season with salt, pepper, and garlic powder.
  • Add the broth and let it come to a boil.
  • Add the meatballs one by one, and once they start to float, it means it is cooked.
  • Once the meatballs are cooked, add spinach and season with dried parsley.
  • Once the vegetables have cooked down, taste and adjust with salt and pepper, and serve hot. Add pasta or couscous according to preference.
