Mince the onion, carrots, and celery. Set aside.
Combine ground turkey, egg, and whole wheat flour. Season with garlic powder and salt to taste. Mix well, shape into balls, and set aside.
In a deep pot, add a bit of oil, turn to high heat, and saute the onion.
Once the onion is fragrant, add carrots and celery, and saute it well.
Once the vegetables are browned, season with salt, pepper, and garlic powder.
Add the broth and let it come to a boil.
Add the meatballs one by one, and once they start to float, it means it is cooked.
Once the meatballs are cooked, add spinach and season with dried parsley.
Once the vegetables have cooked down, taste and adjust with salt and pepper, and serve hot. Add pasta or couscous according to preference.
