- 1 whole Korean Radish
- Jalapeño Optional
- 1/2 of Whole Onion
- 1 cup Soy Sauce
- 1/2 cup Apple Vinegar
- 1/2 cup Water
- 1/2 cup Allulose or Sugar
Peel the radish and slice it into 1-inch discs.
Slice each disc vertically into 3-4 pieces, then slice the pieces horizontally into thin squares.
Slice the jalapeños, place them in a strainer, and lightly shake them so the seeds come off.
Chop the onion into cubes.
In a bowl, combine radish, peppers, and onion.
Add soy sauce, vinegar, water, and sweetener. Mix this well.
Transfer the brined radish to an airtight container and store in the fridge for 24 hours before consuming.
Serve with any grilled meat and enjoy!
