Prepare your ingredients: Chop the peppers, but be careful in handling them because it can sting. Chop the scallions and onion. Fluff the rice and prepare the seasonings.
In high heat and a splash of oil, scramble the eggs and set aside.
With another splash of oil, saute the chicken. When it is about 70% done, throw in the scallions and saute until fragrant.
Add the onion, Viet peppers, and jalapeño peppers. Saute this really well so the flavors and spice come out.
Once the chicken is cooked and you see toasted marks in it, throw in the rice, and eggs, and season them with sesame oil, oyster sauce, and pepper paste.
Break the rice apart and stir the fried rice really well.
Taste the rice and adjust with salt and pepper.
To take this up a notch, add buldak sauce. Be careful as this is super spicy, but feel free to adjust the spice level according to your tolerance.
Mix the fried rice well and when it is fiercely red and super hot, it’s done!
Plate, top with sunny-side-up eggs, garnish with sesame seeds, serve, and enjoy!
