First off, there are many varieties of sweet potatoes, especially in Asia. For this recipe, we are specifically using Korean Sweet Potatoes or Japanese Sweet Potatoes. These two kids are very similar in terms of:
- Exterior Color: Purple to Pink
- Interior Color: White (Uncooked), Yellowish (Cooked)
- Texture: Drier but fluffier
- Taste: Sweet
American Sweet Potatoes are not amenable to this recipe because they are more bland and mushy when cooked.
When cooking the sweet potatoes, simply place them in the air fryer at 500F for 25 minutes or 400F for 40 minutes. This will cook them up nicely so you can mash them evenly.
Making the Sweet Potato Pancake
For the base of the recipe, make sure to check out my Korean Potato Pancake article. All the processes of grating, draining, and getting natural potato starch are essential for this recipe as well! Before cooking it up, add the air-fried sweet potatoes, and mash them in with the regular potatoes, leaving big chunks so you can really taste them.
For the seasoning, salt it lightly so the taste of the two potatoes comes out. Pepper is optional if you want it to be on the savory side. It doesn’t need sugar as well because sweet potatoes bring a natural sweetness to it already.
TIP: Do not forget to add the natural potato starch from the regular potatoes to help bind the whole pancake.
To make sure you cook it evenly…
- Spread the pancake evenly. This is very important because it affects your momentum in flipping. When one side is heavier, it might make flipping a lot harder.
- Panfry for a minute on high heat on each side, then panfry for a minute on low heat on each side. This ensures that it cooks the middle evenly without burning the edges.
- Watch out for white smoke. That is usually the sign that what you’re cooking is close to burning. Flip constantly until the desired doneness is achieved.
- Flip with caution. This pancake is a lot flimsier than gamjajeon, so do flip with caution.
To finish, swirl 1 tablespoon of butter on the edge of the pan to coat and further crisp up the pancake.
What Does Korean Sweet Potato Pancake Taste Like?
To my surprise, this turned out like the Honey Butter Chips that we have in Korea. It was lightly sweet, savory, and buttery. Most of all, the taste of the potatoes was highlighted as compared to when you add a lot of stuff to it.
It should be consumed as it is and no sauce is needed. It’s not that crispy, so the texture really is like a pancake. These turned out so good, for sure you’ll down these too because my team did!
