Avocado Roll is a sushi roll that is seafood free and mainly uses cucumber, carrots, and avocado. If you love sushi but don’t like meat or seafood, just like my wife, this recipe is perfect for you! Avocado rolls are 100% vegetarian!
Did you know that avocados are not available natively in Japan? It was only in the 1970s that avocados were imported to Japan from Mexico and that was the only time they began having it.
Here in the US, avocados weren’t really used in sushi. It was only when a Japanese chef had a hard time sourcing Toro, a fatty part of tuna, to be used in his sushi that he made use of avocado as a substitute because it had the same buttery texture. Since then, avocados have been widely used throughout sushi recipes. Furthermore, sushi has then been widely accepted in America.

What’s in Avocado Roll?
The main ingredients for avocado roll filling are cucumber and carrots. In preparing the vegetables, use a serrated peeler or mandolin because you want them to be as thin and as consistent in size as possible. It’s quick and easy to use, just be careful in handling them.
After preparing the rice and nori, simply place the vegetables in the middle. Roll and tuck as usual using a bamboo mat. This will become the base of the sushi.
The star of this avocado sushi recipe is, of course, the avocado. Slice them as thin as possible so that they can be pliable enough to warp around the sushi roll. After that, spread them flat and top them on the roll. Your best friend in this step is a sharp knife.
How to Slice the Avocado Roll?
In making this roll, you need to be as gentle as possible. You have to be gentle in transferring the avocados on top of the sushi, wrapping them around the roll, tucking it all in, and slicing them.
Carefully plate the sushi and garnish with the leftover veggies. Serve with soy sauce and enjoy! It takes a lot of patience to make this, but it’s definitely worth it!

Avocado Roll
Equipment
- Serrated Peelers
- Bamboo Sushi Roller
- Cling Film
- Sharp Knife
Ingredients
- 2 cups Rice Freshly cooked
- 1.5 tbsp Rice Vinegar
- Nori Sheets Cut lengthwise
- Sesame Seeds
- 1 pc Avocado Thinly sliced
- 1 pc Cucumber Julienned
- 1 pc Carrots Julienned
- Soy Sauce Optional
Instructions
- Season the rice with rice vinegar, mix, and set aside.
- Prepare other ingredients.
- Wrap your bamboo sushi roller with cling film.
- Wet your hands then spread out the rice in nori sheets then spread sesame seeds on top.
- Turn it upside down and place it on the bottom of the bamboo roller.
- Place cucumber and carrots on top of the nori, then roll and tuck. Make sure that all fillings are compressed.
- Roll and tuck once more to lock the sushi. If fillings fall out, put the roll on the edge of the bamboo roller, roll and tuck it all inside.
- Place thinly sliced avocado on top of the roll.
- Put cling film on top of the roll, then the bamboo roller, and use those to wrap and tuck the avocado in the roll.
- Once avocados are wrapped and tucked, remove bamboo roller and keep cling film, then slice into 6-8 pieces.
- Remove cling film and plate the sushi rolls.
- Dip in soy sauce and enjoy!
