From here on, I am already warning you that this is extremely spicy! This recipe is meant for people who are up for the challenge.
- Chili Peppers. You can use any kind you prefer. It doesn’t matter if it’s Thai Chili Peppers or Jalapeno Peppers, you can use what you have in your pantry. Sometimes I find some peppers to be mild in terms of heat, but if you want them to be at their peak hotness, use fresh chili peppers.
- Korean Red Pepper Paste or Gochujang. This is a savory and spicy paste that will be the base of the sauce.
- Garlic. Aside from just bringing in the spice, we will also add garlic for aroma and zing!
- Soy Sauce. This will bring out the taste of the other elements of the dish and also bring the umami.
- Sesame Oil and Sesame Seeds. For a nutty and earthy finish that complements the soy sauce and the pepper paste.
- Sugar. For balance of flavor which also complements the soy sauce and the pepper paste.
- Water. We will add a bit of water to dilute everything and help the sauce be absorbed thoroughly by the mushrooms.
As I’ve mentioned, make this with caution and according to your spice tolerance. Below are tips on how to carefully make this just to be on the safe side. Do read through before cooking this up!
Tip #1: Use gloves!
When you are slicing the chilis, use gloves! This is just to ensure that there will be no spice left in your hands after chopping them up. Or else you’ll end up touching your face, body, or even other people and end up stinging them! Kakakaka~
Tip #2: Ensure ventilation when you’re cooking!
Before you even start, make sure that your ingredients are ready. This is a very quick recipe wherein you just sauté all the sauce ingredients. Taking too long may burn the peppers and make them bitter.
Having said that, since most of the ingredients are spicy, the aroma will be equally spicy! It can sting your airways as well as the people around you, so make sure you have ventilation while cooking!
Tip #3: Be Prepared
I know some people can really enjoy spicy food, but there will always be a limit. Make sure that you have drinks like cold water or milk nearby, just to help ease the pain of the heat when you can’t take it anymore~ Kakaka~
Bonus Tip: Take the Spice Up a Notch
This may sound crazy to some people, but I know that everyone who loves spice also loves taking it to another level. This is optional and should be done with extreme caution: Add pepper flakes or Capsaicin Powder.
Korean Hot Pepper Flakes are usually milder in spice and a little bit sweet. If you think that the chili peppers and chili paste are almost there, but still not enough… The pepper flakes will definitely add a little more heat to satisfy you.
Korean Capsaicin Powder, on the other hand, is super SUPER spicy. This chili powder is what we use when making Buldak (Fire Chicken). Yes, that’s the flavor of the previously trending spicy ramen challenges. A little of this capsaicin powder adds serious heat, so make sure to take it up a notch with extreme caution!
Serving Spicy Enoki Mushroom
Since this is extremely spicy, these mushrooms are perfect to serve with some freshly cooked rice. The mushrooms are a perfect meat substitute and can stand alone as a main dish. You can also serve this with some cheesy ramen so the creaminess and spiciness can complement each other.
Once you give this a try, let me know how it went afterward in the bathroom! Kakaka~
