
This Spicy Fire Chicken Fried Rice is my fried rice version of the popular buldak ramen! It’s extremely spicy, but it comforts and satisfies your hot HOT cravings!
Recently, bulkdak ramen has grown in popularity. It started with the spicy noodle challenge until the brand continuously expanded its flavors and more people started to love the combination of creamy, cheesy, tangy twists on the spicy noodles.
Did you know that they also sell their buldak sauce as a condiment? For this Buldak Fried Rice, I used the one from the ramen packet, but you can use the bottled sauce so you can control the spice level!
If you love spicy food, this recipe is perfect for you! It has all the elements—rice, vegetables, and protein all coming together because of the chili peppers, aromatics, and buldak sauce. It’s quick, easy, comforting, super filling, and just altogether a lovely dish!
Personally, I like to use this recipe because ramen noodles are sometimes hard to digest. And even if there is sodium from the buldak sauce itself, you are eating this with real and healthy ingredients like rice, chicken, and aromatics. So it’s still a win!
Ingredients for Spicy FIRE Chicken Fried Rice

My main rule in any fried rice recipe is to ensure that the ratio of the rice to all the toppings combined is 1:1. This ensures that you get rice, protein, and veg in every bite!
Rice

For any fried rice recipes, I use freshly cooked rice. Fresh rice will yield soft and fluffy fried rice. Contrary to what most people say that you need day-old rice so you can easily crumble it, I have a technique that will yield the same result.
When the rice is cooked, you need to fluff it to release the steam and cool it down. Now you have rice that’s perfect for fried rice!
Chicken and Eggs
The main proteins for this dish are chicken and eggs. You can use boneless chicken thighs so they remain juicy when cooked, but chicken breast or leftover rotisserie chicken are also ok.
I like to add eggs that are big chunks just for additional protein.
Scallions and Onions
In any of my fried rice recipes, I use scallions and onions for aromatics. When you saute these, they become fragrant, and a great base that will coat the rice grains with flavor and make it tasty. Aside from these, you can add frozen veggies if you like.
Vietnamese Peppers and Jalapeño Peppers

Since this is a hot and spicy fried rice, we are going to use Vietnamese and jalapeño peppers. These are extremely spicy so you need to be careful in handling them. Either use gloves or wash your hands really well and avoid touching sensitive parts of your body like eyes because it will sting.
Seasonings and Buldak Sauce

The sauces for this fried rice are soy sauce or oyster sauce, gochujang, sesame oil, and buldak sauce. Soy sauce or oyster sauce is for the umami and sesame oil will be the earthy and nutty complement to it.
Even if there’s a lot of spice in this dish already, the pepper paste will be the additional spice and savor.
We won’t need any more salt! Lastly, the buldak sauce. This sauce already has its own flavor and spice so use it according to your taste and spice tolerance.
How to Make Spicy FIRE Chicken Fried Rice?

Prepare your ingredients by chopping the aromatics, peppers, and chicken into bitesize pieces. Set them aside. Fluff the rice and prepare the condiments as well. This is going to be a quick recipe, so prepare beforehand so you don’t burn anything.
NOTE: Use a separate chopping board for the raw meat as a food safety measure. And as mentioned, be careful in handling peppers—wash your hands properly and avoid touching sensitive parts of the body in the meantime.

In a hot pan with a bit of oil, scramble the eggs and set them aside.

Following that, saute the chicken. When it is about 70% cooked, add the scallions and saute until fragrant. This will make the chicken tasty because of the pagirum or scallion oil!

Once fragrant, add the onion, Viet peppers, and jalapeño peppers. Saute all these well to really bring out the flavor and the spice.
NOTE: At this point, the smoke coming from the stir fry will sting a bit because the ingredients are very spicy. It may cause a slight sting in the eyes and nose so make sure you have good ventilation!

Once the chicken is cooked, add the rice and eggs, and season it with sesame oil, soy sauce/oyster sauce, and pepper paste. Break the rice apart and mix the fried rice really well.

At this point, taste the fried rice and adjust it with salt and pepper. It’s already very tasty and you can eat it as it is. But since this is FIRE Chicken Fried Rice, we will add the buldak sauce.
NOTE: Notice that I added the buldak sauce last because you need to taste the spice level of the fried rice first before adding it. Again, only add according to your spice tolerance! This is a very spicy fried rice!

Mix the sauce well and the fried rice should turn a fiercely red color, super spicy, and very delicious! Top with fried egg, garnish with sesame seeds, and enjoy right away!
NOTE: If you notice, I like to cook in high heat because this helps add a smoky flavor to the fried rice. This also helps reduce steam as you stir constantly so you avoid soggy fried rice. It’s also okay to use a regular pan, but if you have a wok, that will also add a smoky flavor to the dish!
Serving and Storage for Spicy FIRE Chicken Fried Rice

This Spicy Chicken Fried Rice is already packed so there’s no other dish you need to serve it with. But if you still wish to have side dishes, I recommend having it with non-spicy side dishes like beansprout banchan, broccoli banchan, or water kimchi! This will help tone down the spice in every bite!
For any leftovers, store them in the fridge in an airtight container for 3 days. But I’m sure you will finish this in no time! The aftermath might sting, but it’s totally worth it!

Spicy FIRE Chicken Fried Rice
Ingredients
- 5 pcs Vietnamese Peppers
- 1 pc Jalapeño Peppers
- 1 stalk Scallion
- 1/4 of Whole Onion
- 1 cup White Rice
- 2 pcs Eggs 1 for stir-frying, 1 for topping
- 1 pc Boneless Chicken Thighs
- 1 tbsp Sesame Oil
- 1 tbsp Oyster Sauce or Soy Sauce
- 1 tbsp Pepper Paste
- Buldak Sauce Put according to your spice tolerance
- Vegetable or Canola Oil For stir-frying
Instructions
- Prepare your ingredients: Chop the peppers, but be careful in handling them because it can sting. Chop the scallions and onion. Fluff the rice and prepare the seasonings.
- In high heat and a splash of oil, scramble the eggs and set aside.
- With another splash of oil, saute the chicken. When it is about 70% done, throw in the scallions and saute until fragrant.
- Add the onion, Viet peppers, and jalapeño peppers. Saute this really well so the flavors and spice come out.
- Once the chicken is cooked and you see toasted marks in it, throw in the rice, and eggs, and season them with sesame oil, oyster sauce, and pepper paste.
- Break the rice apart and stir the fried rice really well.
- Taste the rice and adjust with salt and pepper.
- To take this up a notch, add buldak sauce. Be careful as this is super spicy, but feel free to adjust the spice level according to your tolerance.
- Mix the fried rice well and when it is fiercely red and super hot, it’s done!
- Plate, top with sunny-side-up eggs, garnish with sesame seeds, serve, and enjoy!
