Cheesy Spam Rice is a 10-minute, one-pan meal that takes only a few ingredients yet oozing in so much flavor!
Cheesy rice spam is one of those meals you can cook when you’re A) super hungry, B) in need of comforting, or C) you’re hungover and need something to kick it off. This only requires a few ingredients which I am sure are already in your pantry!
Why Spam?
Whenever I use spam in my recipes, many people say it’s unhealthy. But what most people don’t know is that canned luncheon meat is part of Asian culture. It’s affordable, it’s delicious, and super easy to prepare. Need I say more??
Moreover, we don’t eat it every day. I believe balance and moderation in meals are still the key. So don’t worry, just enjoy spam and its versatility to be used in different kinds of dishes like kimchi fried rice or kimbap!

For the seasoning, I used gochujang for spice and savor, and ketchup for sweetness and acidity. The combination may sound unusual, but this works so well! Then top it with sesame oil for that nutty finish!
In the same way, for the toppings, use corn kernels, spam, and mozzarella cheese for the contrasting sweet, salty, and creamy flavors. This dish works in perfect harmony with simple everyday ingredients.
Lastly, use a ttukbaegi so it’s one pan for cooking and for serving, and so the rice will crisp up on the bottom for additional texture. If you don’t have an earthenware bowl, then a small pan is also okay to use. Also, fresh or leftover rice is okay to use.
How to make Cheesy Spam Rice?
1. Place your rice in the middle of the ttukbaegi, and season on top with gochujang, ketchup, and sesame oil. Make sure to add them on top of the rice so they soften it, making it easier to mix.
2. Top with corn and spam, then mix it thoroughly. However, if you want additional texture, you can crisp up the spam before mixing it with the rice.
3. Add cheese, cover, turn the heat to medium, and let it cook for five minutes. If you like crispy rice, try cooking it a bit longer to toast the bottom.
4. Once you hear sizzling and the cheese is melted, mix it one more time, and garnish with seaweed paper. The more you mix this, the better it tastes! Ooh!
5. This is literally done in 10 minutes with no fuss! Serve hot and enjoy! Be careful though!
