How to Make Fried Eggs with Ketchup?
![Saute the onion and scallions](https://chefchrischo.com/wp-content/uploads/2025/02/fried_egg_with_ketchup-7.jpg)
Chop the onion and scallions, then in high heat, add a bit of oil to your pan, and saute them until fragrant. This is going to be one of the sources of flavor in the dish.
![Place the eggs on top of the sauteed aromatics](https://chefchrischo.com/wp-content/uploads/2025/02/fried_egg_with_ketchup-6.jpg)
Place two eggs on top of the sauteed aromatics and let it partially cook. Optionally, you can also scramble the eggs to make it like the shortcut version of Chinese Tomato and Egg Stir Fry!
![Combine the sauce ingredients and add to the eggs](https://chefchrischo.com/wp-content/uploads/2025/02/fried_egg_with_ketchup-5.jpg)
Meanwhile, combine ketchup, soy sauce, oyster sauce, garlic, and water. Mix it thoroughly and once the eggs are half-cooked, add the sauce.
![Baste the eggs with the sauce until cooked](https://chefchrischo.com/wp-content/uploads/2025/02/fried_egg_with_ketchup-4.jpg)
Baste the eggs with the sauce so it helps them steam the egg whites while keeping the yolk runny, and let the rest of the sauce reduce. Add jalapeño peppers or chili oil, taste, and adjust with salt and pepper.
