Italian Wedding Soup is a warm and comforting soup filled with meatballs and a variety of vegetables. This is one of our family favorites, Carter and Wesley-approved!
Italian Wedding Soup is an Italian-American dish. It actually has nothing to do with weddings, rather it’s the “marrying” of the meatballs, vegetables, and broth creating one hearty soup according to my research.
This soup is popular in our home courtesy to my wife who often makes this for us. Since I cook mostly Korean food, I love that my wife introduces me to more variety of dishes. It’s one of my favorites and our kids enjoy this but with small noodles for them.
It’s a super easy recipe with ingredients readily available in everybody’s pantry. But what I love about this the most is that my kids be drinking all the nutrients without them knowing it! Kakaka~
Italian Wedding Soup Ingredients
- Vegetables – This soup uses onion, carrots, celery, and spinach. You can literally use as many vegetables as you like.
- Chicken Broth – Use broth to make it richer, and feel free to use other types of broth like beef, vegetables, etc.
- Garlic Powder – We prefer to use freshly minced garlic, but since we ran out, garlic powder also works
- Fresh Parsley – For additional freshness to the dish.
- Salt and Pepper – To taste
- Pasta Noodles – You can use broken-up pasta stands, small shells, orzo, etc. You can also use couscous! This is optional, add according to preference, simply add more broth since it will be soaked up by the noodles.
Turkey Meatballs
- Ground Turkey – We prefer to use ground turkey so it renders less oil since the kids are eating, but you can also use ground beef.
- Egg – To help bind the meatballs.
- Whole Wheat Flour – To help bind the meat as well.
- Garlic Powder and Salt – To taste
For this recipe, you can actually use your favorite meatball recipe or any frozen meatball you like to make it so much easier!
How to Make Italian Wedding Soup
Prepare the Ingredients
Mince the onion, carrots, and celery. We minced this because our kids are eating, but you can also make it a bit chunkier according to preference.
Make the Meatballs
Combine ground turkey, egg, whole wheat flour, garlic powder, and salt. Mix it well until incorporated and roll it into balls. Place meatballs on a tray and set aside in the fridge.
Make the Soup
- In a deep pot, add oil and turn to high heat. Start by sauteing the onion. Once fragrant, add the carrots and celery. Saute until the vegetables have browned for more flavor.
- Season the vegetables with salt, pepper, and garlic powder, then mix well.
- Add broth and bring it to a boil.
- Once boiling, add the meatballs one by one. Once they float on top, it’s cooked.
- Continue to boil the soup until the vegetables are fully tender and all meatballs are cooked thoroughly.
- Add the spinach, season with parsley, and let it boil.
- Once the leaves have cooked down, taste them, then adjust them with salt and pepper, serve them hot, and enjoy!
Serving and Storage
- Serve this as a main dish or as a side soup to meals. The kids love this with noodles, but my wife and I like this with rice and grilled meat for a refreshing and filling meal.
- For any leftovers, this can be stored in the fridge for 3-5 days. Or you can freeze this soup and store it for up to 3 months. Great for meal prepping or a quick soup for the cold weather. Reheat in the microwave or on the stove.

Ingredients
- 2 Large Carrots Minced
- 1 Large Onion Minced
- 8 stalks Celery Minced
- Spinach As much as you like
- Salt To taste
- Pepper To taste
- Garlic Powder To taste
- Dried Parsley To taste
- 1-1.5 L Chicken Broth
- Grapeseed or Olive Oil For sauteing
Turkey Meatballs
- 1 lb Ground Turkey
- 1 pc Egg
- 2.5 tbsp Whole Wheat Flour
- Garlic Powder To taste
- Salt To taste
Instructions
- Mince the onion, carrots, and celery. Set aside.
- Combine ground turkey, egg, and whole wheat flour. Season with garlic powder and salt to taste. Mix well, shape into balls, and set aside.
- In a deep pot, add a bit of oil, turn to high heat, and saute the onion.
- Once the onion is fragrant, add carrots and celery, and saute it well.
- Once the vegetables are browned, season with salt, pepper, and garlic powder.
- Add the broth and let it come to a boil.
- Add the meatballs one by one, and once they start to float, it means it is cooked.
- Once the meatballs are cooked, add spinach and season with dried parsley.
- Once the vegetables have cooked down, taste and adjust with salt and pepper, and serve hot. Add pasta or couscous according to preference.
