This Korean Sausage Stir Fry is an easy side dish that adults and kids will love because of its mouth-watering sauce! It’s also a perfect way to finish off leftover vegetables!
Korean Sausage Stir Fry also called Sausage Ya-chae Bokkeum is a side dish made with vegetables and hotdogs! Some might say that hotdogs are not the healthiest, but it’s a pretty great protein to add for quick, easy, and broke boyz meals so I ain’t complaining~
I wanted to share this dish mainly because this is a great way to introduce gochujang to anyone who might be skeptical about it. Mixing the gochujang with some ketchup will help counteract the spice, and so far, there has been positive feedback ever since we gave it out as a free side dish in the restaurant.
For this recipe, there are three components: The hotdog, the vegetables, and the sauce.
What are Korean Hotdogs??
In Korea, it is more common to use Korean Vienna sausage as the main ingredient in side dishes. They come in small and bite-size pieces, the meat is usually coarser than the typical hotdog, and it is placed in thick casings. If you want to use these, you can usually get them at Hmart or any Korean grocery store~
Nevertheless, feel free to use your favorite brand of hotdog that you have access to. Although it is not everyone’s cup of tea, I still think it’s great for easy meals.
Making Korean Sausage Dish Healthy
For this hotdog side dish recipe, I mainly used onions, carrots, green peppers, and yellow peppers. The reason why I did this is because the colors look pretty when mixed together! Kakaka~
Since I mentioned that this is a great way to finish off remaining vegetables: You can use zucchini, snap peas, beans, broccoli, or whatever you have available. Just slice them into bite-size pieces and use equal parts of the hotdog and all the vegetables combined so that it is balanced.
When cooking the vegetables, make sure to throw in the one that takes the longest to cook first before adding the others. Lightly stir fry the veggies so they maintain their crunch. Some vegetables, like cabbage, tend to release moisture as they cook so be mindful of that!
TIP: Cut the vegetables beautifully so that your food doesn’t only taste good, but also looks good. If you noticed, I cut up the peppers in a triangular shape and the carrots in a flower shape. Even though it is a simple recipe, the presentation makes it seem special and we spent a lot of time working on it. To cut the carrots like flowers, make small triangles around the circumference of the circle, then chop them up thinly. If you’re in need of a new knife, check this one out~

The sauce ingredients are Gochujang or Korean Red Pepper Paste, Ketchup, Corn Syrup, Sesame Oil, and Sesame Seeds. If corn syrup is not readily available, feel free to substitute it with sugar or any sweetener you like.
You might be wondering what the mix of these actually tastes like. It’s sweet and savory with a little bit of spice. The corn syrup will complement the savor of gochujang, while the ketchup will balance its spice. Just like I’ve mentioned, this is the perfect way to introduce pepper paste to anyone who might want to try it out!
The sauce is what will bring the dish together~ Your kids will love this and even finish off the vegetables!! Not so unhealthy now, nah mean??
Serving and Storage
This sausage side dish is perfect with freshly cooked rice. And take note, you need to serve this with rice since it might be a little salty without it. In some cases though, this can also be served as a snack when you’re drinking, but that’s up to you!! Kakaka~
Since it’s also back-to-school season or if you’re just bringing lunch to your office, this is a perfect meal prep! After cooking, let it cool down, and store it in the fridge. Should be alright to stir fry them a bit the next morning or simply reheat them in the microwave.
