Omurice is fried rice wrapped in a thin sheet of egg topped with an amazing marinara sauce. It is inspired by the combination of Western omelet and Asian fried rice.Β
Reading the first line, you might think there are too many things happening in this dish. Thatβs true, but these different elements go well together, and this might just be your go-to lunch or dinner every day!
Omurice is a classic dish that many Japanese people grew up with. During the Japanese occupation of Korea, this dish was also adopted by Koreans.
This recipe, however, I learned from a chef that I used to work with but Iβm not really sure if itβs Japanese or Korean style. Nevertheless, it is still so good that you need to give it a try!Β

Fried Rice
In omurice, tomato fried rice is commonly used as a filling. Tomato means it is cooked with ketchup. While that is okay, to me you can essentially use any fried rice that you like.Β
I cooked up chicken fried rice in the recipe card below but you can also use pork, beef, or just vegetables. Other fried rice recipes you can use:
In the fried rice base I made, I used 1 cup of rice, 1 cup of toppings (chicken + vegetables + egg), and 1 tbsp of sesame oil, soy sauce, and oyster sauce each. This combination is just right for me.Β
A tip in making YOUR fried rice, make sure that it tastes just right, not too salty or not too bland. This will give space for the omelette and the sauce bring in their game too!
Omurice Sauce
The sauce is relatively easy to make. For the base, combine marinara sauce, ketchup, sugar, curry powder, dashida, butter, and water to a low boil.
If you donβt have curry powder, cumin is a good substitute. If you donβt have dashida, beef bullion powder is a good substitute.
Once it is boiling, add heavy cream and milk. As it comes together, the sweet, sour, savory, and creamy taste will develop. Sounds a bit much but trust me on this! Add salt and pepper to taste, and chili powder for a light kick.
How to Make Omelette Rice?
Once youβve prepared the fried rice and the sauce, making the omelet is the final step.Β
There are actually two ways to go about this: The traditional way and the easy way.
The traditional way of making it is to cook the egg flat like a crepe on the pan, add a bit of cheese in the middle if you like, and then place the fried rice in the center. You will then wrap the rice with the egg.Β
It gets tricky when you remove the whole thing from the pan, so using a nonstick pan in making omurice is necessary. Gently roll it to the side of the pan until you can transfer it to a plate.Β
The easy way of doing it is to simply make a soft scrambled egg in a small pan. You can make it curdle or tornado-shaped and then top it on your rice. Make sure that the fried rice is cupped or domed so the curdled or tornado egg covers all of it. No flipping needed!Β
Either way, you plan to make it, pour over the sauce, and enjoy.
Making Omelette Rice Easy
I donβt advise making the omelet in advance and storing it in the fridge. However, you can definitely make the fried rice and sauce ahead of time and store them in the fridge. When ready, you can have omurice anytime! This will drastically make a difference when you cook this for yourself anytime you feel like it or for your whole family!Β
Serving Omurice
When serving, this is already good as it is. No need for an accompanying dish. As mentioned, it is already complete with carbs, protein, and vegetables. If you like, you can serve this with side dishes like fresh kimchi, cucumber salad, radish salad, etc.

Ingredients
- 3 pcs Eggs
- Mozarella Cheese
Fried Rice
- Vegetable or Canola Oil For sauteing
- 1 stalk Scallions Chopped
- 1/4 of Onion Minced
- 1/4 of Carrot Minced
- 1 pc Boneless Chicken Thigh Cubed
- 2 pcs Eggs Scrambled (Optional)
- 1 tbsp Sesame Oil
- 1 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
Omurice Sauce
- 1 cup Marinara Sauce
- 1 cup Water
- 3 tbsp Ketchup
- 1 tbsp Sugar
- 1/4 tsp Curry Powder
- 1/4 tsp Dashida
- 1/4 tsp Capsaicin Powder Optional
- 1 tbsp Butter
- 3 tbsp Heavy Cream
- 9 tbsp Milk
- Salt and Pepper To taste
Instructions
Fried Rice
- Saute scallions and chicken with a bit of oil. When itβs halfway cooked, throw in the onion and carrots. Saute for a couple of minutes.
- Add the rice, sesame oil, soy sauce, and oyster sauce. Mix thoroughly, breaking the rice and letting it dry up.
- Add egg and mix thoroughly. Take off the heat and set aside.
Omurice Sauce
- Combine marinara sauce, water, ketchup, sugar, curry powder, dashida, capsaicin powder, and butter. Mix, let boil in low heat, and allow to thicken up a bit.
- Add cream, milk, and let boil in medium heat.
- Add salt and pepper to taste. Set aside.
Making Omelette Rice
- Spread out the egg evenly in a nonstick pan. When 70% is cooked and is holding shape, put cheese in the middle.
- Place fried rice in the middle and then wrap it with the egg.
- From the middle, slowly roll the omelette to the side of the pan until it can be transferred to a plate.
- Pour sauce into the omelette and enjoy.

Notes
- If wrapping the fried rice is too hard, you can simply make a soft scramble curdled or tornado-shaped. Top in a bowl of cupped fried rice, then pour the sauce.
