Pork Belly Fried Rice is one of my family’s go-to dinners. It’s quick and easy to put together, super meaty from the big chunks of pork belly, and so good even with simple Asian ingredients.
This pork belly fried rice recipe is done in one pot for 20 minutes, and it will leave you and your family super satisfied!
As Koreans, thinly sliced pork belly is an ingredient we often have in the freezer. I love to stir fry this for a quick Korean BBQ dinner, but in this blog post, I’ll share how to turn this stir fried pork to a delicious fried rice. Both my wife and kids love this simple recipe!

The Best Type of Rice for Fried Rice
You can use any type of rice to make fried rice, but I find medium-grain white rice absorbs the seasonings the best.
For any fried rice, leftover rice is preferable, as it has dried out and can easily be crumbled.
However, if you don’t have leftover rice—my personal preference is to use freshly cooked rice. My quick tip to prevent soggy or mushy fried rice is to steam it a little longer so no moisture is left, mix it to release further remaining steam, then let it cool for a while before using.
Thinly Sliced Pork Belly
For this recipe, I like to use thin pork belly strips so it’s meaty. No need to chop it into small pieces so you get a good chunk in every bite. This is the highlight of the dish!
I also love pork slices that have a little bit of fat so it renders and adds flavor to the fried rice. If you don’t have this cut, you can also use thick cuts of pork belly or pork shoulder, then chop it to bitesize pieces.
Seasonings
- Garlic – For freshness that will cut through the pork fat.
- Soy Sauce and Oyster Sauce – For umami flavor to the fried rice. If one is not available, you can use more of the other. However, I do like the combination of both!
- Sesame Oil and Sesame Seeds – To complement the umami and pork flavor and for an earthy and nutty finish!
- Butter – My secret to any good fried rice, this will definitely elevate this simple recipe!
- Salt and Pepper – To taste.
How Do You Make Pork Belly Fried Rice?
To begin, place pork belly in a heated pan. Spread it out evenly and wait until the pork has rendered fat and has a bit of browning before you turn or mix.
NOTE: If you find that there is too much oil rendered by the pork, feel free to reduce it by wiping it with a paper towel.
Once there is browning on one side of the pork, season it with garlic, soy sauce, salt, and pepper, then stir fry until all sides are golden brown. Seasoning the pork and browning it will bring out its natural flavor which will make the fried rice tastier.
Place garlic, knob of butter, and rice on top of the pork, then season the rice with oyster sauce and sesame oil. Break the rice and mix it thoroughly until all grains are seasoned.
Garnish with some sesame seeds and egg yolk, then mix again until everything is coated with that creamy yolk!
Serving Pork Belly Fried Rice
Since my version of pork belly fried rice is already meaty on its own, I like to serve this with perilla leaves or seaweed paper. To eat, place a leaf on your palm, add a tablespoon of fried rice, wrap and take one big bite! Every bite is a balance of pork, rice, and greens!
You can also make the secret sauce from my mushroom fried rice to top the fried rice. Simply combine onion, scallions, soy sauce, vinegar, plum sauce, sugar, gochugaru, sesame oil, and sesame seeds. Drizzle this on every bite and it’s golden!
Furthermore, you can serve this with other vegetable side dishes like napa cabbage kimchi, radish kimchi, cucumber salad, radish salad, or beansprout banchan!
For any leftovers, store in the fridge for up to three days and stir fry or microwave to reheat.

What’s the best pan to use?
You can use a wok (if you have one) for an additional smoky flavor, but high heat and extended stir-frying can also do the trick. As an additional tip, since we are using high heat, prepare the ingredients beforehand so you don’t burn the fried rice.
Can I add vegetables to my fried rice?
Feel free to add vegetables to make the fried rice more nutritious—scallions and onion, kimchi, frozen mix, cabbage, and soybean sprouts are all good choices that will complement the pork.

Ingredients
- 1 bowl Cooked Rice
- Pork Belly As much as you like
- Salt and Pepper To taste
- 1 tbsp Garlic
- 2 tbsp Soy Sauce
- 1 tbsp Butter
- 1 tbsp Sesame Oil
- 1 tbsp Oyster Sauce
- Sesame Seeds For garnish
- 1 pc Egg Yolk For garnish
Instructions
- In a heated pan, place the pork belly without oil because it will still render some fat.
- Allow the pork to render some fat and brown at the bottom, then season with salt, pepper, garlic, and soy sauce.
- Stir fry until the pork belly is cooked and lightly golden brown.
- Make a bed of the pork belly, then add rice and butter in the middle.
- Season rice with sesame oil and oyster sauce, then break the rice and mix thoroughly.
- Garnish with sesame seeds and egg yolk, then mix again thoroughly.
- Serve with perilla leaves and enjoy!
