What are Enoki Mushrooms?

Enoki Mushrooms are a type of mushroom that’s common in East Asian dishes. It looks like noodles with its white, long, and slender strands; And its taste profile is earthy and umami. You can cook these with a sauce or add them to stir-fries or soup. Either way, it becomes a great vessel of flavor.
Like any mushrooms, these are also chewy. However, it has a distinct crunch that makes eating them perfect as a meat substitute. The experience of eating it will keep you from looking for meat in a meal!

Where can I buy these mushrooms?

I typically purchase enoki mushrooms at HMart or other Asian grocery stores. However, with the growing popularity of Asian cuisine and the increasing demand from vegetarian and vegan communities, I believe that major grocery chains and even some farmers’ markets are now likely to stock them as well.
When you get them, they should look fresh, dry, and firm. This ensures that it is still in its optimal taste and best for use. Once bought, store it in the fridge and use up within a week.
Usually, you can get them either wrapped in plastic packaging or vacuum-packed. If they are wrapped in plastic, I recommend using them right away since the moisture build-up inside the plastic will speed up the spoiling. If vacuum-packed, it can prolong the shelf life, but make sure to check if it has turned slimy, discolored, and/or has a pungent odor. It means the enoki mushrooms have gone bad. Throw that jawn out already~
How to cook Enoki Mushrooms??

Slice 1 inch off the bottom of the packaging to remove the roots of the mushroom. Remove them from the packaging and lay them flat on a cutting board.

Slice the mushrooms horizontally but lengthwise to create 1/2-inch thin “sheets” of enoki. This creates more surface that will get nicely seared when you cook it.

Remove any dirt from the mushroom strands and dunk them in water to clean while keeping them intact.

Place your pan on high heat, add oil, and sear the mushrooms on both sides. Notice that they will release water, but because of the high heat, it will evaporate and will start to create golden brown sear marks.

Meanwhile, combine soy sauce, garlic, sesame oil, sugar, black pepper, sesame seeds, and water. Mix this thoroughly until it creates a uniform sauce.

Once the mushrooms are nicely seared, pour the sauce, coat every strand, and let them simmer until the sauce is absorbed. Garnish with sesame seeds, serve, and enjoy!

You can literally stir fry it, deep fry it, wrap in it thin-sliced meat and grill it, oven-bake it in foil, or add it to soups and hotpots! Soy Garlic Enoki Mushrooms
Ingredients
- 1 pack Enoki Mushrooms Usually 200g
- 2 tbsp Vegetable or Canola Oil For sauteing
- 1 tbsp Soy Sauce
- 1/2 tbsp Garlic
- 1/2 tbsp Sesame Oil
- 1/2 tbsp Sugar
- Black Pepper To taste
- 3 tbsp Water
- Sesame Seeds For garnish
Instructions
- Slice an inch off the bottom of the packaged enoki and discard it.
- Take the mushrooms out of the package, lay them flat on the cutting board, and slice horizontally but lengthwise to create 1/2 inch thin "sheets".
- Dunk each slice of the mushroom in water to clean it.
- Place pan on high heat, add a bit of oil, and sear the mushroom slices on both sides so it becomes nicely golden brown.
- Meanwhile, combine soy sauce, garlic, sesame oil, sugar, black pepper, sesame seeds, and water.
- Add the sauce to the mushrooms, coat every strand with it, and simmer until the sauce is reduced and thoroughly absorbed.
- Garnish with sesame seeds, serve, and enjoy!
