
Dubu Jorim is a simple dish that’s big on flavor. It’s savory, sweet, and spicy, perfect with rice and other Korean side dishes!
Dubu Jorim is tofu braised in an aromatic, spicy soy sauce. It’s crispy on the outside, tender on the inside, and has nicely absorbed all that delicious sauce. This is highly addictive, especially when you drizzle all that sauce on top of the rice. And because this is a tofu recipe, I guarantee that it’s all done in one pan, under 10 minutes—a perfect dish if you need a quick meal!
Honestly, I’m not really a big fan of tofu, but I like to play around with different recipes for it, especially now that I’m on a diet, because it’s easy to prepare, it’s high in protein, and it’s basically a great vessel for any sauce that you cook it with. Tofu is very versatile! Whether crispy, tender, or a soup add-on? Tofu is the answer! As such, you truly need to give this a try!

- Tofu – Soft, medium, or firm tofu can all be used for this dish, but medium or firm may hold better and do not need extra care when handling. Get a newly manufactured tofu, so it’s fresh and creamy.
- Onion, Scallions, Garlic – These are the aromatics for that fresh and fragrant flavor to the sauce.
- Jalapeño Pepper – For the spicy kick, optional, depending on your preference.
- Soy Sauce, Fish Sauce, and Oyster Sauce – The trio of savor and umami, where most of the flavor of the sauce will come from.
- Mirin – This will add sweetness and acidity that will balance out the savory trio above. You can use any sweet cooking wine in place of this.
- Sugar – Like mirin, this will balance out the saltiness from the trio above. You can swap this with your preferred sweetener.
- Gochugaru – For spice and fierce red color, optional, depending on your spice tolerance.
- Black Pepper – To taste
- Water – To loosen up the sauce for braising.
- Sesame Seeds – For garnish
How to Make Dubu Jorim?


Prepare the ingredients by chopping up the garlic, onion, scallions, and jalapeño peppers. Drain the tofu, pat it dry, and slice it into 1/2 inch rectangles.


Place the pan on high heat, add oil, and pan-fry the tofu for 3-5 minutes on each side or until slightly browned and crispy.


Meanwhile, combine onion, scallions, jalapeño peppers, soy sauce, mirin, fish sauce, sugar, gochugaru, garlic, oyster sauce, black pepper, and water. Mix this well.

Pour the sauce and let the tofu braise in it for another 3-5 minutes. Let the sauce reduce and be absorbed by the tofu.

Plate the tofu, drizzle all that sauce on top, and garnish with sesame seeds. Enjoy!
Recipe Notes
- Pat the tofu dry well so it crisps up faster.
- Use a non-stick pan to cook the dish so it’s easier to handle the tofu and keep it from breaking when being flipped.
- When the sauce is combined, it may be salty at first, but this will be absorbed and balanced out later when mixed with the tofu.
Serving and Storage

This is a Korean banchan that can be prepared ahead of time and served with any meal, along with other side dishes like kimchi, cucumber salad, stir-fried zucchini, broccoli banchan, or braised lotus roots. It’s so good with rice, and drizzling all the sauce on top is a must!!
Whether you make a big batch or simply have leftovers, you can store them in the fridge for about 3 days. This will taste even better the next day because the tofu will continue to absorb the sauce. Serve this cold or heat it in the microwave; either way is okay! Quick and easy meal anytime!

Ingredients
- 400 grams Tofu
- 1/4 of Whole Onion
- 1 stalk Scallion
- 1 pc Jalapeño Pepper
- 3 tbsp Soy Sauce
- 2 tbsp Mirin
- 1 1/2 tbsp Fish Sauce
- 1 tbsp Sugar
- 2 tbsp Pepper Flakes
- 1 tbsp Garlic
- 1 tbsp Oyster Sauce
- Black Pepper To taste
- 1/2 cup Water
- Sesame Seeds For garnish
Instructions
- Prepare the ingredients by chopping garlic, onion, scallions, and jalapeño peppers.
- Pat the tofu dry and slice it into 1/2 inch thick rectangles.
- Place the pan on high heat, add oil, and pan-fry the tofu for 3-5 minutes on each side or until brown and crispy.
- In a bowl, combine onion, scallions, jalapeño, soy sauce, fish sauce, oyster sauce, mirin, sugar, gochugaru, black pepper, and water. Mix this well.
- Once the tofu is crisp on both sides, add the sauce and braise it for 3-5 minutes until it has reduced.
- Plate the tofu, drizzle all the sauce on top, garnish it with sesame seeds, serve, and enjoy!
